oba-'s surroundings: landscapes and garden of La Manchuela

Cueva de los Ángeles cave, in Villamalea

00 — LANDSCAPES

The paths around La Manchuela are also part of our pantry: a landscape that changes with the seasons and shapes what ends up on the table.

Between the Júcar and Cabriel valleys grow the wild plants, fruits and herbs we gather together with our producers, always respecting their natural time.

Every landscape we visit has a story to tell: a centuries-old olive tree, a riverbed that dries up in summer, a holm oak grove that shelters game. All of that ends up in the kitchen too.

GARDEN

The garden is the origin of our cooking. A space for growing, research and experimentation where we recover traditional varieties, study how they behave and respect the rhythm set by each season. Here we don't only grow ingredients; we build a living pantry that evolves with the landscape and defines the identity of each season at Oba.
